THE ESTABLISHMENT

Every now and then you walk into a restaurant and within about five minutes you know exactly why it has survived while so many others have come and gone.

The Establishment is one of those places.

Tucked away on Broad Street in the historic James Gregorie House, it is very much an “if you know, you know” restaurant. While everyone chases the newest opening, the latest trend, or whatever social media has decided is important this week, The Establishment has quietly gone about doing what it has done since opening its doors in 2018: serving exceptional food, delivering remarkable hospitality, and creating one of the finest dining experiences in Charleston.

Last Friday, four of us sat down with one goal in mind: order across the menu and see what all the fuss was about.

The answer?

Every bit of it.

Let’s begin with the Steamboat Creek Oysters. These arrived topped with a strawberry lime granita, and admittedly I was skeptical. Strawberries and oysters are not exactly a pairing that immediately jumps to mind. Yet somehow it worked brilliantly. The sweet acidity of the strawberry and lime elevated the natural sweetness of the oyster without overpowering it. Fresh, bright, seasonal, and perfectly balanced.

Next came the Yellowfin Tuna Crudo.

This dish transported me straight back to my childhood on Johns Island. I immediately thought of Jimmy Lucas, who would bring home fresh tuna or wahoo caught just hours before. He would throw it into a Ziploc bag with soy sauce and Vidalia onions and we’d sit on the dock eating it straight from the bag.

That is how fresh this tasted.

Not yesterday fresh. Not this morning fresh. Moments ago fresh.

The grilled peaches were another standout. Snow peas, spring onions, and an Amarillo barbecue sauce that completely transformed the dish. Sweet, smoky, savory, and layered in a way that kept revealing new flavors with every bite.

Then there was the bread service.

Now, the menu description simply says, “Bread Service, really good butter.”

Frankly, we ordered it because we laughed at the description.

The butter? Outstanding. Freshly whipped and absolutely delicious.

The bread? Fine not Fabulous .

For ten dollars I wanted something a bit more memorable, but the honesty of the description may have been the most Charleston thing on the menu.

For entrées we landed on the Ribeye and the Pork Chop.

The ribeye arrived perfectly medium rare and was served with Robuchon potatoes and bordelaise. One of the servers dropped off the potatoes and casually informed us that they were so good you could drink them.

He wasn’t exaggerating.

These may have been some of the finest potatoes I have ever eaten.

The pork chop, accompanied by roasted cipollini onions, carrots, English peas, and ramp bordelaise, was equally impressive. Every component belonged on the plate and every bite delivered.

What truly separates The Establishment, however, is that none of this feels forced. There is no ego. No gimmick. No unnecessary theatrics. Just extraordinary ingredients handled by people who clearly understand exactly what they are doing.

The service was polished without being stuffy.

The wine program was exceptional.

The atmosphere struck the perfect balance between elegant and comfortable.

And the massive video wall in the bar remains one of the most unique and immersive features in Charleston dining.

We dine out constantly. We review restaurants every week. We have seen trends come and go. We have watched restaurants rise and fall.

This was, without question, the finest overall dining experience we have had in Charleston in well over a decade.

Five stars feels inadequate.

If we could give ten, we would.

The Establishment has more than earned its name. It has established itself as one of the premier dining destinations in Charleston.
